To answer directly: no, we don't curate Sid at all — if you enable it, it follows Debian bug-for-bug, exactly as it lands upstream, with no extra vetting or delay on our side. Use it at your own risk, as with any Sid repo. And no, we don't have a Discord or Reddit — that's exactly why these forums exist, they're our main community space. Good catch on item_height too — makes sense, a bigger font needs more vertical room per menu entry, and that's exactly the kind of detail the Font Selector doesn't handle automatically yet.
